Culinary influences?
While vacationing in Thailand with my family I took a cooking class at the Dusittanee Hotel Bangkok. I'm inspired by Asian food and would love to try it all!

Where did you learn to cook?
I loved to cook since I was a child. I learned various cooking techniques from my wife, who is from Thailand.

Favorite cookbook?
The Essential Asian Cookbook by Juliet Rivers.

What's the one ingredient you could not live without?
Thai fish sauce.

Favorite Microbrew beer or wine?
Thai Beer, Koster, or a Chardonnay.

Favorite music to listen to while cooking?
Jazz. It helps me to relax as cooking can be a very stressful job...but I love it!

What is your favorite type of food?
Healthy, low-fat, flavorful and spicy.

Most memorable meal?
Papaya Salad in Thailand, ordered so hot I can barely eat it and lots of beer!

Most memorable dinner guest?
Michael Constantine came in and ordered a seafood curry.

Most irritating celebrity chef?
Rachel Ray.

What makes indie food better?
Helping small businesses and providing fine dining for local people make indie restaurants better.
